Step 1
Cut the pita bread in half. This creates a hollow area, or pocket, to fill your sandwich. Open it carefully with your fingers to avoid cracking it open at the bottom, which sometimes happens if the pita is a little bit dry.

Smear some hummus spread on the inside of the pita bread. Hummus adds a great flavor as well as some protein and spice to your sandwich. It also gives your lunch an extra shot of protein.

Load your pita with the main event--the falafel. Place two to three pieces of falafel inside the pita pocket. Stuff in enough fried chick peas to make a substantial sandwich but not enough to burst the seams of your pita bread.

Add some veggies. Some people prefer traditional lettuce and tomato salad in their pitas, while others opt for a more traditional middle eastern touch such as Israeli salad, made with cucumbers, tomatoes and parsley.

Step 5
Top off your falafel sandwich with a traditional sauce. Tahini sauce is a favorite of many, but some restaurants or falafel carts offer other yogurt based sauces for you to try. Don't drown your pita sandwich in sauce or you risk the bread getting soggy and falling apart before you have devoured your lunch.
