  • 1 egg, beaten
  • 1-1/4 cup all-purpose flour
  • 1 tsp. vanilla
  • 2 cups cooked pinto beans, mashed
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1-1/2 cups apple (3-4 medium), peeled and diced
  • 1/2 tsp. cloves
  • 1 cup raisins
  • 1/2 cup walnuts, chopped

      Preheat oven to 350 degrees. Grease and lightly flour either a 10-inch tube pan or 9x9 square pan.

      Put cream sugar and butter/margarine into a large bowl. Add egg and mix well. Stir in mashed beans and vanilla.

      Combine flour, baking soda, salt, cinnamon and cloves in another bowl. Add dry mixture to butter/egg mixture.

      Stir until everything is blended well. Pour batter into pan.

      Bake for one hour or until wooden pick comes out clean. When cooled, remove and wrap in foil to keep moist. Shake confectioner's sugar on top, if desired, before serving.
