Pancakes are a great breakfast and very hearty, but often they are not as healthy as they could be. This is one of the more healthy recipes for making great pancakes without as much fat in them.

From Quick Guide: Gas Griddle Basics
Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 cup wheat flour, shifted
  • 1 tbsp. baking powder
  • 2 egg whites
  • 1 tbsp. sugar
  • 2 tbsp. safflower oil
  • 1 cup skim milk
  • Griddle
  • Low fat cooking spray
  • Spatula
  • Mixing bowl
  • Mixing spoon
  • Ladle
  1. Step 1

Plug in the griddle and set the temperature for 400 degrees. Allow the griddle to preheat will mixing the pancake mixture.

  2. Step 2

In a mixing bowl, add the flour first. If the flour has not been shifted, this is a great time to shift the flour into the bowl.

  3. Step 3

Add in the baking powder and sugar to the flour and mix the ingredients together well.

  4. Step 4

Add the egg whites, safflower oil and milk to the dry mixture. Mix until there are slight bubbles coming from the mixture. Be careful not to overmix because this will make the pancakes less fluffy.

  5. Step 5

Use the ladle and spoon about 1/4 cup to 1/2 cup of the pancake mixture on to the griddle and cook one side until bubbles form at the top. Turn the pancake over until the middle pops up.

  6. Step 6

Remove from the griddle and serve.

Tips & Warnings
  • These are great with fresh fruit added for a bit of sweetness but still keeps these pancakes healthy. Also if you want to add the fruit to the pancakes before they are cooked, this adds another bit of sweetness.
  • Always be careful around a griddle.
