Things You'll Need:
- * 1 cup margarine
- * 1 1/4 cups white sugar
- * 1 egg
- * 3 ripe bananas
- * 1 tablespoon instant coffee granules, dissolved in
- * 1 tablespoon water
- * 1 teaspoon vanilla extract
- * 2 1/4 cups all-purpose flour
- * 1/4 teaspoon salt
- * 1 teaspoon baking powder
- * 1 teaspoon baking soda
- * 1 cup semisweet chocolate chips

Step 1
Preheat your oven to 375 degrees or slightly less if your oven is on the hotter side. Always preheat your oven because it makes your items bake evenly.

Dissolve instant coffee granules in one tablespoon of water. Set aside for later use in recipe.

Combine the butter with the sugar, egg, banana, dissolved coffee and vanilla. Blend in food processor for two minutes or by hand for four minutes. Add flour, salt, baking powder and baking soda. Blend until all flour disappears.

Gradually add chocolate chips to batter.

Line muffin pan with paper muffin cups or spray muffin pan with a nonstick spray. Fill muffin cups to the top with the batter. Bake for 26 minutes or until toothpick comes out of center clean. Cool on rack before serving.
