Finding recipes for homemade gluten-free baked goods is often challenging. It's hard enough avoiding all the delicious baked goods made with wheat products that the average person can devour. We try to substitute wheat ingredients with gluten-free leaving the result a bakery disaster. This recipe is a gluten-free dream and extremely easy to make. It is moist and lighter on your wallet than store bought gluten-free baked goods. Friends and family who normally wouldn't try your gluten-free treats will beg to join you for a bite.

Instructions

Things You'll Need:

  • 1 cup sugar, 1/2 cup canola oil, 3 medium bananas, 2 eggs
  • 2 cups brown or white rice flour, 1/2 teaspoon gluten-free baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt.
  • 3 tablespoons milk, 2 teaspoons vanilla, 1 teaspoon cinnamon.
  1. Step 1

    With an electric mixer, cream sugar and oil. Add eggs one at a time beating until smooth. Add mashed bananas and mix well.

  2. Step 2

    In a separate bowl, sift together rice flour, baking powder, baking soda, and salt. Add dry mixture gradually to wet mixture continuing to beat until thoroughly combined.

  3. Step 3

    Next, add milk and vanilla. Finally, add cinnamon beating until mixed well. Bake at 350 degrees in a loaf pan for about 35-40 minutes or until a knife inserted in the middle comes out dry.

Tips & Warnings
  • Do not over beat the batter as the mixture can become too thick.
  • Place a piece of foil over the top of the bread loosely after 15 minutes of baking so the top doesn't burn.
  • Let cool before cutting.
  • Serve with fresh fruit or fresh whipped cream.
  • All ovens bake differently ~ Check the bread periodically while baking to ensure the top doesn't burn or the foil hasn't fallen off.

on 9/21/2009 i made this with carob chips & walnuts added in, too~ it ended up being a little grainy- would probably dissolve the sugar in the milk next time & see if that helped!
oh~ ha ha well i suppose if i had remembered to add my egg substitute in there it may have helped with the consistency some!! :D
