When summer is here--you don't need to skip the summer drinks--just make them a little lighter in calories and you can still take part in the fun! Here is my recipe for a simple and refreshing low-cal Mojito.

From Quick Guide: Party with Bethenny Frankel
Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 lime cut into 6 wedges
  • 1 1/2 tbsp. lime juice
  • 2 tbsp. torn mint leaves
  • 1/2 tsp honey, warmed
  • 2 oz. rum
  • 4 oz. club soda
  • Pestle or long spoon
  • Martini shaker
  • Rocks glass
  • Ice
  1. Step 1

Fill a martini shaker with 1 cup of ice. Add lime wedges, lime juice and mint. Muddle lime and mint with the pestle or spoon until well-bruised and fragrant.

  2. Step 2

Combine honey, rum and club soda; stir gently to dissolve honey.

  3. Step 3

Add to muddle mixture and stir until mixture is well-chilled.

  4. Step 4

Strain into the rocks glass filled with ice; garnish with mint and lime if desired.
