Leftover turkey is one of the more popular leftovers found in American homes. Because a turkey yields so much meat, you may end up just tossing what you cannot eat after a few days. With this delicious turkey soup recipe, you can store and freeze leftover turkey for months. Does this Spark an idea?

Things You'll Need

  • Leftover turkey
  • Leftover vegetables
  • 3 tbsp. of salt
  • 3 tbsp. of pepper
  • 1 box of lasagna noodles
  • 2 cups of chicken stock
  • 5 cups of water

Instructions

    • 1

      Remove the leftover turkey from the refrigerator and place on cutting board or kitchen counter. Start removing all the turkey meat remaining on the bone and placing it inside of a deep pot.

      Place the pot on stove and turn the heat on medium for at least 30 minutes.

      Add 2 cups of chicken broth to the turkey inside the pot and stir well. Place top on pot, allow to simmer on medium heat for another 30 minutes.

      Remove lid from pot and set aside. Add the 5 cups of water, 3 tablespoons of salt and the 3 tablespoons of pepper. Mix well and allow to simmer again for 30 more minutes.

      Take out all the leftover vegetables that are inside of your refrigerator and place in soup pot. Stir well and simmer for another 20 minutes or until vegetables have completely re-heated.

      In another pot, bring water to a boil. Take out 1 box of lasagna noodles and break them into pieces. Place noodles inside boiling water and cook until almost done. Once the noodles are cooked, strain and place into a separate bowl.

      Turn heat on the soup down to low and begin to serve in bowls or large soup mugs. Add noodles to soup separately, this allows the noodles to stay firm instead of becoming mushy from sitting inside of the soup broth. Serve this delicious soup with crusty bread.

Tips & Warnings

  • For a thicker soup, add 1/3 cup of cream.

  • If you do not have leftover vegetables, use frozen, fresh or canned.

  • If you have leftover potatoes, you can add those too.

  • If you have other noodles that are leftover, use those instead of the lasagna noodles

  • Add an ice cube or two to children's soup so they do not burn their mouths
