How to Make Faux Tatoes with Cauliflower

Mashed potatoes are tasty, but they can be murder on the waistline, particularly if you are on Atkins or other low-carb diets. Toss away your potatoes and learn how to make faux-tatoes instead, using cauliflower and a few other simple ingredients.

Instructions

Things You'll Need:

  • One head cauliflower
  • 3 oz cream cheese
  • 1 tbs butter
  • salt
  • pepper
  1. Step 1

    Cut the cauliflower florets off the stem, removing the leaves.

  2. Step 2

    Steam or boil the cauliflower until it is very soft. Steaming preserves nutrients that boiling can remove, but either method works well from a cooking stand-point.

  3. Step 3

    Blend the cauliflower, cream cheese and butter in a blender or food processor. Blend to your personal preference. Some people like their mashed potatoes lumpy, some like them smooth. It's the same with mashed cauliflower.

  4. Step 4

    Add salt and pepper to taste.

  5. Step 5

    Serve as you would mashed potatoes. Each half-cup serving provides just one gram of carbohydrates, compared to 30 for mashed potatoes.

Tips & Warnings
  • Remember that Atkins is a high-fat, not high-protein, diet. Feel free to add more cream cheese or butter to taste.
  • Boiling vegetables can remove nutrients that steaming preserves.
