For a variety of reasons, many people have opted to try a gluten-free diet. Maybe you're battling celiac disease or a wheat allergy, or maybe you just want a healthier lifestyle. Regardless, it can be a bit overwhelming at first trying to find recipes that fit into your new meal plan. Don't worry, though: Many of your traditional favorites can be adapted into gluten-free meals. Here's how you can make a delicious and healthy macaroni and cheese dish using gluten-free pasta.

From Quick Guide: Gluten-Free Recipes
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Olive oil
  • 1 box gluten-free pasta shells
  • 2 cups grated cheddar cheese
  • 1/3 cup cream
  • 2 tbs. butter
  • 1 cup fresh spinach, chopped
  • 1 cup chopped broccoli florets
  • 1 tbs. chopped fresh oregano
  1. Step 1

Preheat oven to 350 degrees F. In a large pot, bring 8 cups of water to a rolling boil, and then add a splash of olive oil and the pasta. Reduce temperature to a slow boil, and cook pasta uncovered for 10 minutes. Drain pasta in a colander and rinse.

  2. Step 2

Use a small saucepan to heat cheese, cream and butter while the pasta is cooking. Stir mixture until all ingredients are melted.

  3. Step 3

Combine pasta, cheese mixture, spinach, broccoli and oregano in a lightly oiled casserole dish. Mix until blended.

  4. Step 4

Bake at 350 degrees F for 30 minutes, or until top of macaroni begins to turn golden brown.
