You will love to make and enjoy this wonderful lemon flavored bread. The best part is that this bread is not made with yeast, which can be difficult to work with. Things You'll Need

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. lemon extract
  • 2 tbsp. poppy seeds
  • 3 cups all purpose flour
  • 11/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 1/2 cups milk
  • Glaze:
  • 2 tbsp. lemon juice
  • 3/4 cup confectioners' sugar

Instructions

  1. Making The Bread

    • 1

      Preheat oven to 350 degrees F. Grease and flour two loaf pans. Mix together sugar, oil, eggs, lemon and vanilla extracts in a big bowl. When combined stir in the poppy seeds.

      Sift together the salt, baking powder and the flour. Add this flour mixture to the big bowl with the sugar mixture and pour in the milk. Add the milk and flour mixture alternately and mix well after each addition to the bowl. Divide the batter into two portions and pour into the two loaf pans.

      Bake these loaves for about 45 minutes. The bread is done when when a toothpick inserted comes out clean. Let the loaves cool for 10 minutes and use a knife to loosen all the edges from the sides of the pans. Remove them from the loaf pans and cool on wire racks.

      To make the glaze, combine the lemon juice and confectioners' sugar in a bowl. When ready, let the glaze drizzle over the warm loaves. Serves about 20.

Tips & Warnings

  • You can leave out the poppy seeds and put in a mashed banana, or a handful of blueberries to change the flavor.

  • Make mini loaves or muffins by just putting the batter into different shaped pans.
