How to Make Soybean Chili

Soybeans are high in protein and an excellent means to reduce cholesterol. Try this soybean chili recipe made with ground beef or ground turkey, adjusting the amount of chili powder to fit your tastes. Served with warm cornbread, it’s a great meal for game day, a cold winter day, or any day that you want to spice things up!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 pound ground beef or ground turkey
  • 1 ½ cups chopped onion
  • 2 pounds cooked soybeans or 2 15-oz cans soybeans
  • ½ cup chopped green pepper
  • 2 cans diced tomatoes, 14.5 oz each
  • 1 can tomato sauce, 15 oz.
  • 1 tablespoon chili powder
  • ½ teaspoon pepper
  • Salt to taste (about ½ teaspoon)
  • Grated cheddar cheese as garnish

Step1
Brown meat with onion in a Dutch oven (large pot).
Step2
Spoon off fat and then add remaining ingredients.
Step3
Bring to a boil; then reduce heat and simmer for 60 minutes.
Step4
Sprinkle grated cheddar cheese on each bowl. Serve with hot cornbread and cold milk. Yum!
