Things You'll Need:
- 11/2 Tbsp. cooking oil or olive oil.
- 4 Large eggs
- 1 Squash
- 1/2 Med. onion
- 1/2 Bell pepper
- 1 Tsp. fresh cilantro
- 1/2 Jalapeno pepper
- 1/2 Garlic clove, finely chopped
- 1/4 Tsp. of each: salt, pepper, and
- thyme.
- 1 Tbsp. of milk
- 1/2 a can of Salsa de Pato

Step 1
Pour the cooking oil in the skillet and heat.Saute the squash, onions, peppers and garlic on medium heat until limber.Add thyme and cilantro.Lower heat.

Crack eggs into bowl.Season with salt and pepper.Add milk and stir.Pour mixture over veggies.

Do not stir.Let omelet cook until it sets.Pour salsa de pato over omeletOnce cooked and set. Fold over and serve
