How to Make Eggs Rancheros

Egg ranchero omelets are easy to make and delicious. The crunchy bites and flavor of veggies make it all worthwhile. You don't need to go to a Mexican restaurant to enjoy these huevos rancheros. Invite your family and friends for breakfast. Put on your chef's hat and apron and show them you can cook. Serve with a side order of beacon or saugage. You can eat with flour or corn tortillas.

Instructions

Things You'll Need:

  • 11/2 Tbsp. cooking oil or olive oil.
  • 4 Large eggs
  • 1 Squash
  • 1/2 Med. onion
  • 1/2 Bell pepper
  • 1 Tsp. fresh cilantro
  • 1/2 Jalapeno pepper
  • 1/2 Garlic clove, finely chopped
  • 1/4 Tsp. of each: salt, pepper, and
  • thyme.
  • 1 Tbsp. of milk
  • 1/2 a can of Salsa de Pato

    How to make an Egg Ranchero Omelet

  1. Step 1

    Pour the cooking oil in the skillet and heat.Saute the squash, onions, peppers and garlic on medium heat until limber.Add thyme and cilantro.Lower heat.

  2. Step 2

    Crack eggs into bowl.Season with salt and pepper.Add milk and stir.Pour mixture over veggies.

  3. Step 3

    Do not stir.Let omelet cook until it sets.Pour salsa de pato over omeletOnce cooked and set. Fold over and serve

Tips & Warnings
  • Salsa de Pato is spicy and can be used as a hot sauce.
  • Milk is used to make the omelet fluffy.
  • Eat with flour tortillas
