How to Make Green Pepper Jelly
Green pepper jelly can be put on toast or crackers served with a little cream cheese, or it can accompany pork or be used as a hamburger topping. Making your own also gives you the option to present it as a sophisticated gift. Does this Spark an idea?
Things You'll Need
- 3 large peppers
- 1 1/2 cups apple cider vinegar
- 6 cups sugar
- 2 tablespoons red cayenne sauce or Tabasco sauce
- 3 ounces pectin
- Green food coloring
- Saucepan

Clean and seed and slice the peppers. Put them into a blender or food processor with 1/2 cup of vinegar. Whirl until well-chopped and blended.

Put into a saucepan and add sugar, the rest of the vinegar and the red cayenne sauce. Bring to a rolling boil and boil gently for five minutes.

Remove from the burner and cool for five minutes. Add a few drops of green food coloring. Cool for an additional two minutes and add pectin. Stir well.

Pour into small, sterile jelly jars and seal with paraffin or water bath. Refrigerate.

Tips & Warnings
Fills four small jelly jars.
Food coloring can be omitted.
Seal jelly jars in a water bath only if they don't seal on their own.

very well written how to although Green pepper Jelly is something I never heard of nor has any appeal to me. Probably because I do not eat many peppers. Great article though!
