Do you like eggs? Do you like pasta and want to remain light on your feet? If you're looking for a light pasta dish that won't leave you feeling sluggish, consider this unique twist on your average past dinner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large egg
  • 1 tsp. rosemary
  • salt & pepper to taste
  • 1 tsp. butter
  • 2 oz. uncooked thin spaghetti
  • 2 tbsp. Parmesan cheese, shredded
  • 1 tsp. chopped parsley
  1. Step 1
     

    Bring 6 cups of water to a boil. Add salt to water since this is the only chance you have to season the pasta.

  2. Step 2
     

    Place butter in small skillet over medium heat. Before butter melts, add salt & pepper and rosemary.

  3. Step 3

    Crack open egg into skillet without breaking the yolk or the whites. Allow the egg to cook with yolk facing up for about 3 minutes. When done, the egg should be cooked but the yolk will be firm but not solid.

  4. Step 4

    Add thin spaghetti to water and cook 8-10 minutes, or until pasta is tender.

  5. Step 5

    Drain spaghetti and save 1 cup of spaghetti water. Run cold water over spaghetti briefly and return to pot.

  6. Step 6

    Add 1 tbsp. Parmesan cheese, parsley, and 1/4 cup of spaghetti water over low heat and stir til cheese begins melting.

  7. Step 7

    Place spaghetti on a plate and sit fried egg on top. Cut into yolk first and use it to coat the spaghetti.

Tips & Warnings
  • Try this recipe with all types of pasta.
  • Use your favorite Italian seasonings on this dish.
  • Use ramekins to cook eggs, for a rounder more shapely egg.
  • Over or under-cooking spaghetti will make this dish almost inedible.
  • Cook longer if egg yolk seems too runny.
  • Avoid poking, or trying to spread egg around the skillet, it will cause the yolk to run.
