How to Make Banana Nut Waffles

Things You'll Need
- 2- medium bananas
- 2 cups buttermilk
- 1 tsp vanilla extract
- 1 cup chopped walnuts
- 5 tbs melted butter
- 2 cups flour
- ¼ cup sugar
- ½ tsp salt
- 2 tsp baking powder
- 2 eggs (2 whites, 2 yolks)
- Waffle iron

Spray the waffle iron with non-stick cooking spray. Preheat the iron according to the instructions given by the manufacturer.

Heat the chopped walnuts over medium heat in a skillet for 6 minutes to toast. Place toasted walnuts in a dish and set aside.

In a medium bowl, mix baking powder, salt and flour. In a separate bowl, thoroughly whisk the egg whites. In a third bowl, use an electric mixer to blend the sugar, butter, vanilla extract, buttermilk, bananas, walnuts and egg yolks.

Add the flour mixture and egg whites into the mixture. Mix thoroughly. Pour ¾ cup of the waffle batter into the iron and bake until golden brown. This will probably take approximately 5 minutes. Repeat this step until you have used all of the waffle batter.

You’re done! This recipe yields 4 servings of 2 waffles. You may garnish the waffles with chopped walnuts, sliced banana, whipped cream and syrup if desired.
