Things You'll Need:
- 6 Tablespoons melted butter or margarine
- 1 Red bell pepper, chopped fine
- 1 onion, chopped fine
- 1/2 Cup apricot preserves
- 1 Tablespoon Dijon mustard
- 6 slices of boiled ham
- 6 slices of mozzarella cheese
- 1 Cup seasoned bread crumbs
- 6 Tablespoons Romano cheese, grated

Step 1
Melt 2 tablespoons of the butter in a big frying pan over medium high heat. Add the onions and the bell peppers and cook till soft for about 4 to 6 minutes. In small bowl mix together the Dijon mustard and the apricot preserves.

Step 2
Place each ham slice on surface and put 1 slice of mozzarella cheese on top of it. Next put the cooked vegetables on top of the cheese and roll up. Secure the rolls with toothpicks. Take a large baking sheet and grease it.

Preheat the oven to 350 degrees. Mix the bread crumbs and the Romano cheese in a small bowl. Dip the ham rolls in the melted 4 tablespoons of butter or margarine and then coat well with the bread crumb mixture.

Place the ham rolls with the seem side down on the greased baking sheet. Spoon the apricot mixture over the rolls and bake until hot, about 30 minutes. Serve immediately. Makes 6 servings.
