This Streusel Strawberry Bread is not made with any yeast and it's as easy to make as baking a cake by following the steps below. The strawberries give it a wonderful fruity flavor and just the right amount of sweetness. This bread is great for a quick snack or breakfast. Just add some cream cheese and you're good to go!

Instructions

Things You'll Need:

  • 3 Cups all purpose flour
  • 2 Cups sugar
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Teaspoon cinnamon
  • 4 Eggs
  • 1 1/4 Cups vegetable oil
  • 2 10 Ounce packages of frozen strawberries, thawed and sliced
  • 1 Cup pecans, chopped
  • Streusel:
  • 1/2 Cup light brown sugar
  • 1/3 Cup all purpose flour
  • 4 Tablespoons butter, divided into 8 pieces

    Making The Bread

  1. Step 1

    Preheat oven to 375 degrees. Grease two loaf pans and mix together sugar, flour, salt, baking soda, and cinnamon in a big bowl. With a large spoon make a center ditch in the middle of the mixture, pushing the mix up the sides of the bowl.

  2. Step 2

    Mix together oil, eggs, strawberries, and pecans in another bowl. Once it's well mixed pour into the center ditch you made in the flour mixture bowl. Start by folding the ingredients together and then mix very well. Divide the batter into two portions and pour carefully into both loaf pans.

  3. Step 3

    Make the streusel by mixing the brown sugar and flour in a bowl. Cut the butter into the sugar and flour with butter knives until the mixture is crumbly.

  4. Step 4

    Gently toss the streusel over the top of each loaf. Put in the oven and bake for 45 minutes or till toothpick comes out of center clean. Cool in the loaf pans for about 10 minutes and then remove from pans and let cool completely on wire racks.

Tips & Warnings
  • You can substitute blueberries or any other berries for the strawberries to change the color and flavor of the bread.
