How to Make Vegan Ziti

Are you making the switch to vegan? or are you a vegetarian? Cooking for a vegan? Or just looking for a good and new recipe? This is something everyone should enjoy.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb. ziti
  • 1 c. chopped sun dried tomatoes
  • 1 c. firm silken tofu, crumbled
  • 3 gloves garlic (chopped)
  • 1 TBSP Dried Basil
  • 2 TBSP Balsamic Vinegar
  • salt & pepper to taste
  • 2 TBSP olive oil
  • 1 small can artichokes, marinated - drain and chop
  1. Step 1

    COOK the ziti until noodles are to your liking.

  2. Step 2

    COMBINE - Tomatoes, tofu, garlic, basil, vinegar, salt/pepper, olive oil.
    Blend until smooth.

  3. Step 3

    DRAIN pasta.

  4. Step 4

    TOSS pasta, artichokes and sauce.

Tips & Warnings
  • Top with soy parmesan
