If you like southwestern-style food or Mexican cuisine, you'll love these southwestern-style chicken breasts. They're easy to make following the steps below, and take only about 40 minutes to make. Complete the meal with re-fried beans and Spanish rice and you'll have a meal fit for a king.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 tbsp. extra virgin olive oil
  • 4 chicken breasts, boneless and skinless
  • 1 4-ounce can mild green chiles, chopped
  • 1 1/2 cups salsa
  • 1/2 tsp. ground cumin
  • 1/4 cup cheddar cheese, shredded
  • 1/2 cup guacamole
  • 1/2 cup sour cream
  • 1/4 cup black olives, sliced

Making the Chicken

Step1
Heat the extra virgin olive oil in large frying pan. When hot, add the chicken. Cook for about 2 minutes on each side to brown the chicken.
Step2
Add the cumin, salsa and chiles to the frying pan. Lower the heat, cover the pan and simmer for about 20 minutes.
Step3
Take the cover off and continue to simmer until the liquid is reduced, about 5 minutes. Sprinkle 1 tbsp. of cheddar cheese on top of each chicken breast.
Step4
Cover pan again and continue to simmer until the cheese melts and the chicken is cooked, about 3 to 4 minutes. Serve immediately with sour cream, black olives and guacamole. Makes 4 servings.

Tips & Warnings

  • If desired, you can cut these breast into strips and serve them in warm corn or flour tortillas, and top with the sour cream, guacamole and olives.
  • You can substitute Mexican Ranchero cheese for the cheddar, or buy a package of Mexican blend shredded cheeses.
