If you are on a low carb diet, chances are you get burnt out on eggs for breakfast. This recipe for high protein, low carb, delicious pancakes will have you looking forward to breakfast again!

Instructions

Things You'll Need:

  • 1 egg
  • 1/2 cup lowfat cottage cheese
  • 1 teaspoon oil, such as olive or canola
  • 3 tablespoons whole wheat flour
  • Non-stick spray
  • Measuring cups and spoons
  • Mixing bowl
  • Whisk
  • Strainer or colander with small holes
  • Wooden or other large spoon
  • Skillet or frying pan
  • Spatula
  1. Step 1

    Break the egg into the mixing bowl and beat with the wisk.

  2. Step 2

    Place the strainer or colander over the bowl. Pour the cottage cheese into the strainer or colander. Push the cottage cheese through the strainer with the back of the spoon into the bowl. Mix the egg and cottage cheese until creamy.

  3. Step 3

    Pour the oil and the flour into the mixture. Blend well with the spoon.

  4. Step 4

    Spray the pan with non-stick spray. Heat over low heat. Spoon a quarter of the pancake mix into the pan and press down slightly with the back of the spoon.

  5. Step 5

    Cook for two to three minutes and flip with the spatula. Cook the other side for two to three minutes, and serve. Makes one serving of four pancakes.

  • Serve these yummy flapjacks with some sugar-free fruit preserves.
