Mexico is famous for its wonderful tamales and anyone who has tasted a homemade tamale is bound to be hooked on them forever. This tamale pie combines many of the same flavors and will no doubt be a hit with your family.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 Onion, chopped
  • 1 Tablespoon butter or margarine
  • 1 1/2 Cup of salsa
  • 1 Cup of corn, drained from can
  • 1 1/2 Cups cooked chicken, diced
  • 3/4 Cup cornmeal
  • 1 Tablespoon flour
  • 1 1/2 Teaspoons baking powder
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon chili powder
  • 1 Egg, beaten
  • 1/3 Cup milk
  • 1 Tablespoon extra virgin olive oil

    Making The Pie

  1. Step 1

    Preheat oven to 425 degrees. Cook onions in the butter or margarine over medium heat. Pour in salsa, chicken, and the corn. Simmer for about 10 minutes.

  2. Step 2

    Spray some non stick coating on the bottom of a casserole dish. Pour in the chicken mixture.

  3. Step 3

    Mix together the cornmeal, baking powder, flour, salt, and chili powder in large bowl. Once mixed, add the oil, egg, and the milk. Mix all ingredients well.

  4. Step 4

    Spread the cornmeal evenly over the top of the chicken mixture. Bake for 20 minutes, or till crust is golden brown. Cut pie into wedges and serve immediately. Serves 6.

Tips & Warnings
  • This tamale pie would be equally good with pork or beef instead of the chicken.
  • Serve with your favorite vegetables, grilled or roasted.
  • You can also serve with a dollop of sour cream and guacamole.
