How to Make Butterscotch Pecan Bars
Although butterscotch is a classic taste for hard candy, not many realize its potential in making the most delectable desserts around. Butterscotch pecan bars have a wonderful, buttery taste. Things You'll Need
- 2 1/4 cups Flour
- 2 cups Light Brown Sugar
- 1 cup Butter
- 1/2 cup Finely Chopped Pecans
- 1/2 cup Halved Pecans
- 1/4 cup Granulated White Sugar
- 2 Beaten Eggs
- 11/2 tsp. Baking Powder
- 1/4 tsp. Salt
- 1/4 tsp. Rum Extract
- Mixing Bowl
- 13" x 9" Greased Cookie Sheet
- Sauce Pan

Mix the granulated sugar with 1 cup of flour.

Cut in half a cup of butter until the mixture has the consistency of bread crumbs.

Mix in the chopped pecans, and press the mixture into the bottom on a 13 inch by 9 inch pan.

Bake in the oven at 350 degrees F for 15 minutes.

Meanwhile, melt the remaining 1/2 cup of butter over low heat.

Add the brown sugar. Slowly bring to a boil, stirring constantly until the mixture appears thick and granular.

Allow to cool for 1 minute, but continue to stir through cooling.

Add the eggs in gradually while continuing to beat the mixture.

Mix the four, baking powder and salt in with the eggs.and add to the egg mixture with the rum extract. Mix well.

Mix the rum extract with the egg mixture, and make sure to mix it thoroughly.

Spread evenly over the baked layer, and sprinkle with the pecan halves.

Return to the oven, and bake for 30 minutes. Allow to cool in the pan.

Cut your sweet masterpiece into bars. Your guests are sure to be delighted!
