How to Make Banana Gelato

Gelato, or Italian ice cream, tastes rich and creamy like traditional ice cream but usually has less fat because it is made with milk and just a bit of cream.There is no skimping on flavor, however. The egg yolks give this recipe a thicker texture and the bananas lend just enough sweetness without being overpowering.This recipe is the perfect finishing touch to any meal. Things You'll Need

  • 2 cups whole milk
  • 2 very ripe bananas, peeled and cut in quarters
  • 5 eggs yolks
  • 1/2 cup sugar
  • 2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/3 cup heavy or whipping cream
  • commercial ice cream maker with freezer container

Instructions

  1. How to Make Banana Gelato

      Combine milk and bananas in a large saucepan and bring to a simmer over medium heat. Cover, reduce heat to low and let simmer about 10 minutes.

      Remove from heat; let cool for 5 minutes and then puree in blender or food processor until smooth.

      Return to saucepan and keep warm (over very low heat).

      Beat egg yolks and sugar in a large bowl on high speed until thick. Beat half of the milk mixture into egg yolk mixture until well blended. Add remaining yolk mixture, mixing all. Cook over low heat for about two minutes or until mixture coats spoon.

      Stir in vanilla, salt and cream. Pour all into large container, cover and refrigerate at least two hours. (Mixture can stay overnight.)

      Pour chilled mixture into canister of ice cream maker; freeze according to instructions.

Tips & Warnings

  • Don't use more bananas than recipe calls for, as they tend to overpower other flavors.

  • Make sure ice cream freezer canister is completely frozen before making gelato, or mixture will not completely gel.
