Things You'll Need:
- 1 package fudge cake mix
- 3 tablespoons melted shortening
- 1/2 cup cake flour
- 1 medium egg
- 3 tablespoons water
- 3 (12 ounce) bags semi-sweet chocolate chips
- 3/4 teaspoon peppermint extract
- 6 tablespoons shortening
- Baking sheet
- Waxed paper
- Fork or tongs

Step 1
In a large bowl, combine the cake mix with the flour and mix thoroughly. Add the egg, melted shortening and the oil. Mix until the dough forms a ball.

Cover and refrigerate for at least 2 hours.

Remove from refrigerator and roll the dough out to 1/16 of an inch on a lightly floured board. Cut into 1 1/2 inch circles using the cap to a small bottle as a cutter.

Place on a greased cookie sheet so that the cookies are not touching. Bake at 350 degrees for 10 minutes.

Remove and cool.

Combine the chocolate chips, peppermint, and shortening in a double boiler and heat until melted thoroughly and smooth.

Stir to create a creamy smooth consistency.

Remove from heat, but allow the coating to sit in the double boiler to prevent it from hardening too quickly.

Dip chocolate wafers into the chocolate to coat. Use a fork or tongs to dip the cookie. Be sure to tap the cookie on the side of the pan to remove excess chocolate coating.

Place on a baking sheet that has been lined with waxed paper and allow to cool completely.
