If you love Indian food but don't love the calories, this meal is for you. This is a highly tasty, low calorie vegetable curry. It is simple to make and good for you. Healthy food does not have to taste bland and this recipe helps to prove the point. Read on to learn how to make low calorie vegetable curry.

Instructions

Things You'll Need:

  • 2 cans of chopped tomatoes
  • 100 grams of chopped broccoli
  • 100 grams of chopped cauliflower
  • 2 small potatoes
  • Small onion
  • 100 grams of mushrooms
  • Clove of garlic
  • 1 tsp. of tumeric
  • 1 tsp. of ginger
  • 1 tsp .of mild curry powder
  • 1 pinch of chilli powder
  1. Step 1

    Chop your potatoes into small chunks. Cubes are the best. Place into boiling water and cook for about five to 10 minutes.

  2. Step 2

    Chop up all other vegetables and place in large sized frying pan.

  3. Step 3

    Add your two cans of chopped tomatoes and start cooking. Cook on a medium heat.

  4. Step 4

    Add all of your spices to the vegetable mix and continue to cook over a medium heat. Stir the mixture frequently.

  5. Step 5

    Take you potatoes out of the boiling water and add them to the mixture. Keep cooking until all of the vegetables are soft. Serve as is or place the mixture over some boiled rice.

Tips & Warnings
  • If you are a meat eater, try adding some strips of chicken to the mix.
  • Do not let your potatoes cook completely through while they are in the boiling water. They will turn to mush when you place them in the curry mix. Check them frequently while they are boiling.
