Making chicken breast into cutlets can easily be done once you know the technique. It can come in handy when you want to make a meal with cutlets and only have chicken breasts in the house. Below you will find step-by step instructions on how to make chicken breast into cutlets, which are perfect for broiling, grilling, or sautéing.

Things You’ll Need:

  • Chicken Breast
  • Sharp Knife
  • Wax Paper
  • Meat Mallet/Rolling Pin
  • Cutting Board

How to Make Chicken Breast Into Cutlets

Step1
Place the chicken breast on top of the cutting board with your hand laying flat on top of it.
Step2
Using a large, sharp knife, cut the chicken breast in half so you're slicing parallel to the cutting board.
Step3
Stop cutting when you're 1/4-inch from the opposite side.
Step4
Open the piece of chicken like you would with a book.
Step5
Place a sheet of wax paper on top of a cutting board or other safe work surface. Place one slice of chicken on top of that, and then lay another piece of wax paper over the slice of chicken.
Step6
Pound the slice of chicken with a meat mallet or rolling pin so that it is evenly 1/4 inch thick throughout the whole piece.

Tips & Warnings

  • You can use either parchment paper, wax paper, or plastic wrap when pounding the cutlets.
  • If you don't have a meat mallet or rolling pin you can use a different type of heavy object, such as a skillet.
  • Be very careful when slicing the chicken breast so the hand holding the chicken does not get cut.
