How to Make Carrot Cake

When you think of cake, a recipe with carrots seems unusual, however, carrot cake is a wonderful desert to serve and easy to prepare.The modern carrot cake originally descended from the medieval carrot puddings enjoyed in Europe prior to its new found popularity as a cake. Carrot cake was re-introduced with cream cheese frosting in the 1960s as a health food desert. This is a simple recipe which you can be creative and add ingredients such as rum, pineapple, raisins or orange to it to make it your own that others will rave about.

Things You'll Need:

  • For Cake
  • 2 cups and 1 tablespoon flour
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 and a half cups canola oil
  • 4 eggs
  • 2 teaspoons of vanilla extract
  • 2 cups grated carrots
  • 1 cup chopped pecans
  • For Cream Cheese Icing:
  • 6 ounces of cream cheese
  • 3 tablespoons of cream
  • 1 and half teaspoons of vanilla extract

    How to Make a Basic Carrot Cake

  1. Step 1

    Start off by preparation. Preheat oven to 350 degrees. Grate the carrots and chop the pecans. Put to one side.

  2. Step 2

    Sift together and stir well in your dry ingredients of flour, granulated sugar, baking powder, baking soda, salt and ground cinnamon.Add the oil to the dry ingredients and mix until it is nice and smooth for about 2 minutes.Then add the eggs and vanilla extract and continue to beat for an additional 2 minutes.Next add in the carrots, pecans and anything else you would like to add to make a more personal statement.

  3. Step 3

    Pour the mixture into greased lined round pan (9 inches) and bake for 30-35 minutes or until a toothpick can be inserted into the middle of the cake and is clean when it is pulled out. Allow the cake to cool for a few hours.

  4. Step 4

    Make the icing by beginning with cream cheese, cream and vanilla extract, while the cake is baking or coolingBeat for 4-5 minutes or until light and fluffy. Add the salt and mix again. Add powdered sugar one cup at a time, mixing in between each addition, until the icing is sweet.Then spread the cream cheese icing on the top and sides of the cake and the cake is sure to be a success for any occasion.

Tips & Warnings
  • This cake will keep for a few days in an airtight container.
  • Add some color to the frosting by adding raisins or cherries.
