Things You'll Need

  • 3 cups raw walnuts (unsoaked)
  • Food processor with S blade
  • 16 pitted dates
  • 1 cup cocoa powder
  • 1/2 tsp. vanilla extract
  • 4 tsp. water
  • Serving plate
  • 3/4 cup dates
  • 1 tsp. vanilla extract
  • 1 1/2 cup mashed avocado
  • 3/4 cup cocoa powder
  • 1/4 cup coconut
  • Spatula
  • 1/2 cup water

Instructions

    • 1

      Place the walnuts in a food processor fitted with an S blade and process until smooth.

      Add 16 pitted dates, 1 cup cocoa powder and 1/2 tsp. vanilla extract to the walnut mixture in the food processor. This is the bulk of your cake mix. Process until the mixture begins to stick together. Add 4 tsp. water and process for 30 seconds.

      Remove the cake mixture from the food processor and shape it as desired. Transfer the cake to a serving plate.

      Place 3/4 cup dates and 1 tsp. vanilla extract in the food processor fitted with the S blade to start making the frosting. Process until smooth.

      Add avocado, cocoa powder and coconut. Process until creamy. Scrap the sides of the food processing container with a spatula as needed. Add water and process until you achieve the desired consistency (15 to 30 seconds). Spread the frosting over the cake.

Tips & Warnings

  • This cake will last up to 5 days refrigerated and 2 weeks in freezer.

  • Cover the cake with plastic wrap or place it in a plastic container.
