This is a great meal that can be changed up every time you fix it so it never gets old. All the seasonings are to your taste and can be substituted for any other seasonings you’d like to use or you can add any to the list. This meal also looks great when served and will impress most dinner guests yet is economical, quick and easy to make.

Instructions

Things You'll Need:

  • 1 box fettuccine noodles
  • 3 to 4 pieces of boneless, skinless chicken breasts
  • White cooking wine
  • Pepper (to taste)
  • Salt (to taste)
  • Sweet basil (to taste)
  • Ground sage (to taste)
  • Garlic powder (to taste)
  • Curry powder (to taste)
  • Cajon seasoning (to taste)
  • 2 handfuls shredded Parmesan cheese
  • 2 handfuls shredded Italian blend cheese
  1. Step 1

    Place one box of fettuccine noodles in a pot of water and cook on high heat until brought to a boil, then reduce heat to low. While noodles are cooking, brown chicken in a skillet on the stove over medium heat. Flip chicken frequently to brown evenly. Remove and cut into bite-sized pieces when chicken is brown on both sides.

  2. Step 2

    Return chicken to frying pan and add white cooking wine until chicken is almost covered, keeping heat on low. Add seasonings to taste, stirring frequently. Add cheese, stirring until melted.

  3. Step 3

    Add more wine if wine evaporates or chicken and mixture become dry. Do a taste test to determine if more seasoning is needed and add accordingly. Allow mixture to simmer over low-heat, absorbing wine.

  4. Step 4

    Drain pasta and add to mixture, keeping heat on low, stirring until well mixed and pasta is coated. Allow pasta to soak up remaining wine. Serve and enjoy.

Tips & Warnings
  • Add mixed vegetables, olives or mushrooms to add more flavor and color as well as vitamins to the dish.
  • As with most pasta meals, garlic bread or sticks is a great accessory.
  • A green salad also goes well with the dish; remove pasta and chicken before all of wine is evaporated or absorbed and use as dressing on salad.
