How to Make Chicken Adobo

Chicken Adobo can come in many different flavors, depending on the region. One way of preparing it is grilled, which can enhance the flavor and keep it a healthy meal option.

Things You'll Need

• 4 to 6 chicken breasts, skinless and boneless
• 1 tsp. each of dried oregano and ground cumin
• 1/2 tsp. dried thyme
• 1/4 tsp. ground red pepper
• 1/2 cup onion, chopped
• 6 garlic cloves, minced
• 1/3 cup lime juice
• 3 Tbsp. fresh cilantro, chopped

Instructions

1. 

   Add the garlic, lime juice and onion into a food processor and blending until all ingredients are finely minced. Add these ingredients to a zip lock bag and then also add the oregano, thyme, cumin and red pepper and seal firmly. Move the bag around to get all the ingredients well-blended.

2. Add the chicken breasts into the zip lock bag, removing the air before sealing. Coat the chicken with the marinade and place in the refrigerator for anywhere from 30 minutes to 4 hours.

   Use either an indoor or outdoor grill, and prepare it for direct cooking. To prevent the chicken from sticking to the grill, spray it beforehand with non-stick cooking spray.

4. Take the chicken out of the marinade and place on the grill about 4 inches away from the coals. Throw away remaining marinade and do not use it to coat the grilled chicken. Grill the chicken breasts for 5 to 7 minutes and be sure to check that the middle is no longer pink before serving.

   Place on a serving platter. Add the cilantro to the top and serve. Depending on the style of Adobo you would like to make, adding side dishes that complement the chicken can complete the meal. For this style, add rice and a Tomatillo sauce for a great Latin American flavor.
