How to Bake Coconut Cake

When I was growing up in Northeastern Pennsylvania I would often spend time at my grandmother’s home, learning how to do things the old-fashioned way, and that included baking cakes from scratch. I am going to share Grandma’s recipe for making a very moist white cake with a delicious coconut frosting.

Instructions

Things You'll Need:

  • Cake
  • 2 cups white sugar
  • 1-cup butter
  • Four eggs
  • 1 tablespoon and 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon and 1/2 teaspoon baking powder
  • 1-cup milk
  • One-pound bag of sweetened coconut (half for cake and the other half for the topping)
  • Frosting
  • 1 cup butter, softened
  • 1/4 cup shortening
  • One-cup confectioners' sugar
  • 1-cup milk
  • 1/3 cup and 2 tablespoons all-purpose flour
  • Three teaspoons vanilla extract
  1. Step 1

    Preheat your oven to 350 and grease and flour a 9 by 13 inch pan. Gather all your ingredients for your cake.

  2. Step 2

    In a medium bowl, blend the sugar, butter, eggs and the vanilla, until you have a light and creamy mixture. Add the flour, half the bag of coconut, and baking powder, into the bowl and mix well, add the milk and beat this mixture until it is smooth, and you are ready to bake it into a prepared pan. Finally stir in the milk until batter is smooth.

  3. Step 3

    Pour the batter into the prepared pan and bake for half an hour until the top is golden brown or a knife inserted into the middle comes out clean. Set on the counter top on a hot pad or clean dishtowel to cool down.

  4. Step 4

    As the cake is baking, prepare your frosting, by whipping all the frosting ingredients together in a small bowl until fluff. Cover your frosting with saran wrap and set aside on the counter top until needed.

  5. Step 5

    When your cake is completely cool, use a spatula to spread the frosting over the entire cake and sprinkle the rest of the coconut on top.
