Lamb loin chops are a nice change from chicken or beef and need only a quick turn on the broiler to prepare.This citrusy marinade perks up the flavor and keeps meat extra tender. Serve chops with mint jelly on the side.

Things You’ll Need:

  • 6-8 lamb loin chops
  • 2 TBSP lime juice
  • 1-1/2 teaspoons cracked black pepper
  • 1/2 teaspoon dried parsley
  • 2 TBSP olive oil
  • 2 TBSP marsala wine or balsamic vinegar

How to Make Pepper Lime Marinade Lamb Chops

Step1
Combine marinade ingredients in a small bowl and stir together well with a fork or wire whisk.
Step2
Place chops in baking dish and pour marinade over all, turning several times to coat. Cover tightly and marinade at least one hour or up to overnight in refrigerator.
Step3
Set oven broiler to high and position rack about 4" from heat. Remove chops from marinade and place on foil-lined baking sheet.
Step4
Broil on high for 10-12 minutes, turning once, for medium rare.
Step5
Remove chops from broiler, arrange on plate, and pass mint jelly to serve.

Tips & Warnings

  • Plan on two chops per person. Good with new potatoes and peas.
  • Don't overcook lamb, as meat will become tough.
