How to Make Red Wine Terragon Mayo

This dressing will spice up a boring burger or chicken strips in a second. The tang of the mayo blends perfectly with the sweetness of tarragon and robust flavor from the red wine.

Instructions

Things You'll Need:

  • 1 cup dry red wine
  • 2 cups mayo
  • 1 tbsp dry tarragon or 1/2 Tbsp fresh tarragon
  • small sauce pan
  • spatula

    How to make tangy red wine tarragon mayo

  1. Step 1

    Over medium heat, reduce the red wine almost completely to a thick syrup. Remove from heat. Any red wine will work for this, but the best results pccur when you use a robust Merlot.

  2. Step 2

    Add mayo and tarragon before red wine solidifies. Stir to blend.

  3. Step 3

    Refrigerate in a sealed container for at least an hour, but overnight is better.

  4. Step 4

    Serve on burgers, sandwiches, pita bread and anything else you can imagine.

Tips & Warnings
  • Mayo goes well with turkey burgers mixed with oregano and Parmesan cheese, topped with sliced tomato, caramelized onions, sauteed spinach and mushrooms with garlic, and fresh mozzarella.
  • When you pull the red wine off the heat and mix in the mayo, the red wine will still be hot. Use caution when mixing the ingredients.
