  1. How to Make Mexican Brownies

    • 1

In a mixing bowl, whisk together the brownie mix and the additional ingredients listed on the brownie mix package. Add the cinnamon into the batter and stir well. If you like, you may add walnuts, chocolate chips, or whatever else floats your boat.

    • 2

To make the icing: In a separate mixing bowl, whip the cream cheese until it is smooth and has no more lumps. An electric mixer is best if you have one. Stir in the confectioner’s sugar (a white, powdery sugar often found near the regular sugar in the baking aisle of most supermarkets) and condensed milk. This is available in a can at most supermarkets in the baking aisle near the evaporated milk. If you cannot find it, you can make your own by cooking 1 cup of water and ½ cup of sugar over medium heat for half an hour. Stir the icing thoroughly and set aside until needed.

    • 3

Pre-heat your oven to the temperature specified on the brownie mix box. Usually the temperature for cooking brownies is somewhere between 300 and 375 degrees Fahrenheit.

    • 4

Spray your aluminum or glass baking pan with non-stick cooking spray. Pour the brownie batter into the pan and bake according to the directions on the brownie mix box.

    • 5

Check on the brownies periodically, as they have a tendency to burn. You will know that the brownies are ready if you can poke a toothpick into the center and it comes out clean. Brownies harden as they cool, so make sure that you do not overcook them or they will be difficult to chew.

    • 6

Let the brownies sit for approximately 20 minutes or until they are cool. If you are in a hurry, place the brownies in the refrigerator to accelerate the cooling process. Once cool, frost the brownies using the icing that you set aside earlier.

    • 7

You’re all done! You can serve immediately, or for better taste, refrigerate for a few hours or overnight before serving. You can serve it alone or alongside ice cream. For a warmer, softer brownie, heat in the microwave on high power for 15-20 seconds before serving.
