How to Make London Buns

London buns, also sometimes known as Bath buns, date back to the 18th century. These are large, plump fruit buns with a taste of citrus. They go well with a cup of English breakfast tea and can be eaten as a breakfast bun or as desert.

Instructions

Things You'll Need:

  • 8-ozs self raising flour
  • 2-oz margarine
  • 2-ozs sugar
  • 1-oz finely shredded orange and lemon peel
  • 1 eggs
  • 2 tbspns milk
  • lemon essence
  • mixing bowl

    How to make bath buns

  1. Step 1

    Mix the flour and salt and then rub in the margarine.

  2. Step 2

    Add the shredded peel and sugar.

  3. Step 3

    Beat the egg and add to the mix, saving a small amount to brush over the surface of the buns.

  4. Step 4

    Add a few drops of the lemon essence to the milk and mix it all into the dough.

  5. Step 5

    Divide the mixture into wight equal portions. Form them into buns and flour well.

  6. Step 6

    Place them on a well-greased baking tray, brush over lightly with the remaining egg and sprinkle course sugar over the top of each one. Bake in the oven at 450F for around 20 minutes.

Tips & Warnings
  • Keep your hands well-floured while forming the dough into buns, to stop them becoming sticky and unmanageable.
  • As a slight alternative to this recipe you could add a cup of currents or raisins to the mixture before baking.
  • These buns are great served with butter and jam or honey.
