How to Encrust and Cook Fish

To begin with, you will need to pre-heat the broiler. Broiling is an excellent way to cook fish as it quick and really locks in the flavor. Also take this time to grease the baking pan with either butter and spray a non-stick cooking oil.

Next, get your bowls. Break two eggs in one bowl and scramble the eggs with a fork until they are pretty blended. The mixture should look like the yellow of the eggs.

In the second bowl, mix two cups of the bread crumbs with a marginal amount of salt and pepper. Use a pepper mill and just twist a few times into the bread crumbs. Use about a pinch of salt as well.

Then get two pieces of fresh fish already filleted. You can buy this from your local grocery store. Take the fish and dip it in the egg. Dip both sides well and make sure that it is covered with egg. Then quickly move the fish to the breadcrumbs and place it down in the bowl. Cover very well with breadcrumbs making certain to cover the sides and then turn over the piece of fish to repeat.

Repeat for the second piece of fish and then place both in the baking pan. Place the pan in the broiler and broil for about three minutes. Turn over each piece of fish and broil for another three minutes. Remove when the topping is brown and the fish flakes with a fork.

Remove fish from the broiler and place on plates. Cut lemon and squeeze one lemon wedge on each piece of fish. They are ready to serve.

Tips & Warnings
Remember that encrust means to coat or cover something like a crust. So be creative and try different ingredients following the same steps above. Try macadamia nuts or walnuts for a different twist or even Parmesan cheese.
This recipe is best with a mild fish such as tilapia.
If you don't have a broiler, try sauteing the fish in a pan on your stove.
Make sure that the fish is filleted by a professional or it may fall apart while cooking.
Be careful of over-cooking the fish or it will be dry and tasteless.
