How to Make Gluten Free Banana Bread

Banana bread is a favorite "coffee break" bread, and a delicious, nutritious addition to any diet. For people who must go gluten free, however, finding a tasty banana bread can be a challenge. Learn how to make gluten free banana bread using a wide variety of seemingly odd, but yummy, ingredients.

Things You'll Need:

  • 1 1/3 c. bean flour (garbanzo or fava is best)
  • 1 1/3 c. cornstarch
  • 1 c. tapioca flour
  • 1 tsp. xanthum gum
  • 1.5 tsp. baking soda
  • 2.5 tsp. cream of tartar
  • 1 tsp. salt
  • 4 egg whites
  • 2 eggs
  • 1 1/3 c. agave nectar
  • 2 tsp. cinnamon
  • 2/3 c. butter
  • 2 c. mashed bananas
  • 2 tsp. vanilla (gluten-free)
  • 2 large loaf pans
  • Cooking oil spray

    How to Make Gluten Gree Banana Bread

  1. Step 1

    Mix together the bean flour, tapioca flour, cornstarch, xanthum gum, salt, baking soda, cinnamon, cream of tartar and salt.

  2. Step 2

    Combine the butter and the agave nectar. Mix thoroughly and then add the eggs. Beat thoroughly until the mixture is creamy.

  3. Step 3

    Mash 4 bananas (2 cups).

  4. Step 4

    Add the mashed banana to the egg/agave nectar/butter mixture.

  5. Step 5

    Add the dry mixture to the wet and mix thoroughly.

  6. Step 6

    Preheat oven to 350 degrees F.

  7. Step 7

    Grease two loaf pans with cooking spray.

  8. Step 8

    Split the batter in half and put half in each loaf pan.

  9. Step 9

    Bake for 45 minutes and check loaf; if knife comes out of the middle clean, the bread is done.

    Wait for the bread to cool completely before slicing.

Tips & Warnings
  • Sprinkle a little brown sugar on top of a nice, sweet crust.
  • Don't use too much banana; it will make the bread gooey.
