Oven roasted Yukon gold potatoes have a uniquely creamy flavor and texture.

Yukon gold potatoes are more thin skinned and flavorful than regular baking potatoes, and as the name implies, they're a nice pale yellow color. Because they're more tender, these potatoes are ideal for oven roasting. With just a few spices and some olive oil, you can turn out a side dish that's a nice complement to barbecued meat or a roast. Things You'll Need

  • 6 medium Yukon gold potatoes
  • 2 tbsp. olive oil
  • 1/2 tsp. oregano
  • 1/2 tsp. chives
  • 1/2 tsp. dried parsley

Instructions

      Preheat oven to 400 degrees. Lightly grease a 9-by-13 baking pan.

      Scrub potatoes, and remove any eyes or bruised spots, but don't peel. Coarsely chop potatoes into chunks.

      Place potatoes in dish and sprinkle with oregano, chives and parsley.

      Drizzle olive oil over the potatoes and use a rubber spatula or wooden spoon to mix well, making sure all of the potato pieces are covered.

      Bake uncovered, at 400 degrees for 40 to 50 minutes or until the potatoes are lightly browned and crispy.

Tips & Warnings

  • Toss potatoes with 1 tbsp. fresh minced garlic instead of the other spices for roasted garlic potatoes.

  • Stir potatoes a few times while roasting so they don't stick to the pan.
