How to Cut Open a Pineapple

Pick a fresh pineapple. A good, ripe pineapple will be slightly yellow with fresh looking leaves on the top. If you pick a leave at the top of the pineapple, it should come right out with minimal resistance. If you have to pull hard to get a leaf off of it, put it back and grab another one.

Cut the top and bottom off of the pineapple. You don't have to take too much, but take enough to expose fresh pineapple on the inside.

Using your knife, slice the shell from top to bottom, cutting just deep enough to expose the fresh pineapple. Repeat these vertical slices until the outer shell is completely cut off. This process is similar to peeling a potato with a knife, in that you are looking to simply remove the outside and salvage as much of the inside as possible.

If you are dicing the pineapple, or making chunks, make vertical cuts with the knife around the hard core. Remove the core and you are left with nothing but pure pineapple.

Cut the pineapple accordingly. Take your remaining pieces of fresh pineapple and cut it into the size and shape that you want. If you want chunks of pineapple, simply take each piece that you have and cut it into what you would like.

Tips & Warnings
Trim only what needs to be trimmed. Try to salvage as much of the pineapple as you can while still removing the outer shell and core.
Always handle knives very carefully.
An uncut pineapple can have sharp points. Handle with care until the shell is removed.
