How to Make Broccoli and Cheese Soup

Broccoli may be every kid's nightmare, but with this yummy recipe they'll be asking for it all the time. This tasty broccoli cheese soup is especially good with some warm, crusty French bread.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 6 cups fresh broccoli florets
  • 3 celery stalks, sliced
  • 1 small onion, diced
  • 2 cups water
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 1/3 cups milk
  • 1 lb. processed cheese (Velveeta), cubed
  • stock pot
  • sauce pan
  1. Step 1

    In a stock pot, combine the broccoli florets, celery, onion and water. Bring to a boil.

  2. Step 2

    Reduce heat, then cover and simmer for 15 minutes.

  3. Step 3

    While your vegetables are simmering, melt the butter in a sauce pan. Stir in flour until smooth, then slowly add milk. Bring the mixture to a boil, stirring for about 2 minutes until thickened.

  4. Step 4

    Reduce heat and add the cheese. Continue stirring until the cheese is completely melted.

  5. Step 5

    Drain the vegetables and add the cheese mixture to the stock pot. Heat through. Your broccoli cheese soup is ready to eat.

Tips & Warnings
  • A warm slice of crusty French bread makes this soup even more hearty and delicious.
  • This recipe yields about 4 to 6 servings.
  • When cooking the cheese, be sure to stir continuously so that cheese does not burn to the sides and ruin the flavor of your dish.
