How to Make a Zucchini Frittata

A frittata, a type of Italian omelet, has all the ingredients of a traditional omelet, but it is not folded. This recipe, which calls for the ingredients to be mixed together and spooned into patties in a skillet, can be enjoyed for breakfast or for a light lunch. .

Things You'll Need:

  • 2 Medium Zucchini
  • 1 Small Peeled Potato
  • 1 Small Onion
  • 3 Scrambled Eggs
  • ½ cup Shredded Cheddar
  • 3 tbsp. Baking Mix
  • 1 tbsp. Butter
  • Salt
  • Pepper

    How to make a Zucchini Frittata

  1. Step 1

    Grate zucchini, potato and onion. Mix together in a small bowl.

  2. Step 2

    Add eggs, cheese and baking mix. Blend well. Add salt and pepper to taste.

  3. Step 3

    Generously melt the butter in a large skillet, using medium heat.

  4. Step 4

    Spoon zucchini mixture into skillet, forming small patties. Turn with spatula until browned on both sides. (For extra crispness, place briefly under broiler.)

  5. Step 5

    Remove from heat, and drain on paper towels to soak up extra grease. Eat hot.

Tips & Warnings
  • Make sure that you do eat the frittata when it is hot!
  • Avoid using too much butter, or it will be too greasy.
  • Watch carefully to avoid burning.
