How to Make a Zucchini Frittata

  • 1 Small Peeled Potato
  • 1 Small Onion
  • 3 Scrambled Eggs
  • ½ cup Shredded Cheddar
  • 3 tbsp. Baking Mix
  • 1 tbsp. Butter
  • Salt
  • Pepper

  1. How to make a Zucchini Frittata

      Grate zucchini, potato and onion. Mix together in a small bowl.

      Add eggs, cheese and baking mix. Blend well. Add salt and pepper to taste.

      Generously melt the butter in a large skillet, using medium heat.

      Spoon zucchini mixture into skillet, forming small patties. Turn with spatula until browned on both sides. (For extra crispness, place briefly under broiler.)

      Remove from heat, and drain on paper towels to soak up extra grease. Eat hot.
