How to Cook Fresh Vegetables

Cooked vegetables are usually objected to due their bland, sharp or bitter taste. However, alot of people are turning to vegetables as their main source for vitamins and also as a healthy supplement to help in losing weight. This is an easy and tasty recipe for vegetables which will entice the non-vegetable eaters to change their minds.

Things You'll Need:

  • 4 small green bell pepper grilled, skinned & rinsed
  • 4 tomatoes skinned & seeded
  • 1/2 large spanish onion
  • 2 small eggplants trimmed
  • 4 small trimmed zucchini
  • 1/2 cup olive oil
  • 2 garlic cloves (crushed)
  • 2 teaspoons red pepper flakes
  • Salt and black pepper
  • 2 small hot chili peppers sliced
  • 1/2 cup of lemon juice
  • Lettuce bay leaves
  • 2 tablespoons italian parsley
  1. Step 1

    Cut the peppers into half and seed and core them.

  2. Step 2

    Cut the peppers, tomatoes and onions into cubes.

  3. Step 3

    Cut the eggpalnts and the zucchini into half cubes.

  4. Step 4

    Place all the cut vegetables in a saucepan and wash them thoroughly.

  5. Step 5

    In a separate sauce pan. measure 6 tablespoons of olive oil, with the salt , black pepper and the garlic.

    Sautee the cut vegetables with the mixture of olive oil, garlic salt and pepper.

    Add tomatoes and the hot peppers.Toss the mixture once then remove the pan from heat.

    Let the vegetables cool then sprinkle with some olive oil and lemon juice.

  9. Step 9

    In a separate serving dish, lay the bottom with lettuce leaves then pour the vegetables into the dish.

Tips & Warnings
  • When serving the vegetables you may sprinkle parsley to each serving. This adds to the flavor of the vegetables.
  • Remember to wash the vegetables throughly and seed and core the peppers as well. It is rather unpleasant to encounter seeds as you chew the vegetables. This can also be hazardous for your teeth.
