How to Make Mushroom and Coconut Curry

Things You'll Need

  • 2 cups brown or button mushrooms
  • 1 small onion
  • 1/2 clove garlic
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon chopped fresh gingeroot
  • 1/3 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Dash tumeric
  • Dash ground red pepper
  • 1 to 2 tablespoons coconut milk
  • 3 tablespoons yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon garam masala
  • 1/2 tablespoon lemon juice

Instructions

      Prepare the vegetables by halving the mushrooms and chopping the onion and garilic.

      Heat the oil in a saucepan over low heat. Add the garlic and onion. Cook for 5 minutes stirring occassionally until softened.

      Stir in the cumin, coriander, turmeric and red pepper. Cook for 1 minute. Add the mushrooms, cover and cook 10 minutes until the mushrooms are softened, stirring occasionally.

      Stir the coconut mil into the mushrooms. Stir in the yogurt, salt and garam masala. Simmer, uncovered for 2 minutes until it resembles a thick cream.

      Stir in lemon juice, serve hot with rice.
