How to Make Coconut Oatmeal Cookies

Oatmeal cookie fans will love this recipe, which replaces raisins with dried cranberries and adds shredded coconut for a sweeter, moister taste.

Instructions

Things You'll Need:

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup margarine or butter, softened
  • 1/4 cup shortening
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. vanilla
  • 1/4 tsp. baking powder
  • 1 egg
  • 1-1/2 cups quick oats
  • 1 cup wheat flour
  • 1 cup dried cranberries
  • 1/2 cup shredded coconut

    How to Make Coconut Oatmeal Cookies

  1. Step 1

    Preheat oven to 375 F. Mix all ingredients except the oats, flour, cranberries and coconut.

  2. Step 2

    Stir in the remaining ingredients slowly, continuously mixing until well blended.

  3. Step 3

    Drop the dough by spoonful about two inches apart on an ungreased cookie sheet.

  4. Step 4

    Bake them until light brown, about 8-10 minutes. Immediately remove them from the cookie sheet. Set aside on a cool plate or waxed paper until they're cool enough to handle without falling apart.

Tips & Warnings
  • Don't overbake. Cookies may seem too soft when removed from the oven but will harden slightly while cooling.
