  • 200g of a good melting cheese. ( Stilton is highly recommended)
  • 1 Leek
  • 1 Small to medium sized onlin
  • 1 Large potato
  • 1 Litre of soup stock. ( Chicken works well but if you're vegetarian, vegetable stock is just as tasty.)
  • 100 g of cream
  • Cooking oil

      Cut up the onions and leek. Cook them in a pan with heated oil until they are soft.

      Cut up the potato into small pieces. Squares are easy and work well.

      Heat up the soup stock, Combine the onions, leek, and potato. Bring to and cook until potato chunks are soft.

      Reduce to a medium heat and let the broth cool slightly.

      Begin adding the cheese. Add it gradually in chunks and stir. Keep this going until the cheese is gone.

      Add the cream in the same way you added the cheese, slowly and keep a continuous stir.

Tips & Warnings

  • This soup can be frozen to serve at a later time.

  • Do not add the cream or cheese while the mixture is boiling. This could cause it to separate and ruin the soup.
