How to Make Sicilian Olive Salad

Sicilian olive salad is a simple and easy dish to serve a gathering of friends and family, but its rich texture and full color will never betray that you only spent a few minutes whipping this salad up. Does this Spark an idea?

  • 2 1/2 cups large green olives (about 1 pound)
  • 3 celery ribs
  • 1 carrot
  • 1 small red onion
  • 1 garlic clove
  • 1/2 cup drained caperberries
  • 1 tbsp. chopped fresh oregano leaves or 1 1/2 tsp. crumbled dried oregano
  • 1/2 tsp. freshly ground black pepper
  • 1/2 cup extra-virgin olive oil

Instructions

      Rinse olives and drain well.

      Thinly slice the celery, carrot, onion, and garlic and dump the veggies into a bowl.

      Stir the veggies together with the remaining ingredients.

      Cover the salad and stick it in the fridge for at least 24 hours, but up to three days before you’re ready to eat it.

      Before serving, allow the salad to rest, covered on the counter and come to room temperature.
