Low carb diets are a highly effective way to lose weight. However, in order to maintain that weight loss dieters have to eliminate most breads and bread-based foods from their diet. Even after you have achieved your goals you still cannot indulge in many breads because they are high in carbohydrates and will cause the pounds to pile back on. The best way to deal with this aspect of low carb dieting is to replace high-carb foods with low carb versions of the same food. In this article, we will discuss how to bake low carb muffins.

Things You'll Need:

  • 2 cups almond flour (almond meal)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, melted
  • 4 eggs
  • 1/3 cup water
  • 1/3 cup liquid sweetener
  • Muffin baking tins
  • Paper muffin cups
  • Mixer
  • Spoon
  • Spatula
  • Ice cream scoop

    How to Bake Low Carb Muffins

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Line the muffin tins with the paper muffin cups. This will make the muffins easy to remove from the pan after baking.

  3. Step 3

    Mix the almond flour, baking powder and salt together. Use the spoon to mix them so that the dry materials do not fly everywhere.

  4. Step 4

    Blend in the eggs, butter, water and sweetener. Mix the batter until is is smooth and even in color and texture.

    Filling the muffin cups about 2/3 will result in pretty muffins like these that puff slightly over the edges of the paper cups.

    Scoop a full scoop of batter into each muffin cup. This should fill each cup about 2/3 full.

  6. Step 6

    Bake for 15 minutes. They are done when the muffin is firm and springs back to the touch.

Tips & Warnings
  • You can add fresh or frozen blueberries, carob chips or dried fruit to make different kinds of muffins.
