Big breakfasts and brunches are a weekend tradition in many households and while savories are at the top of the breakfast food chain, there is something to be said for all the sweet goodness that bakery treats have to offer. Why not serve up some Cowboy Coffee Cake with your next scrambled egg surprise? Your family and your guests will be thoroughly pleased. Here’s how to make patisserie-style Cowboy Coffee Cake in big Texas style.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Large mixing bowl
  • 2 small mixing bowls
  • Sifter
  • Wooden mixing spoon
  • Butter knife
  • Spatula
  • 8 x 8 Pan
  • 1 1/2 Cup sifted flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 Cup sugar
  • 1/2 Cup milk
  • 1 egg
  • 1/4 Cup butter or margarine
  • 1 tsp. vanilla
  • Topping:
  • 2 tbsp. margarine
  • 1/2 Cup brown sugar
  • 1/2 Cup chopped nuts (optional)

Step1
Turn the oven on to 375 degrees F.
Step2
Grease pan and set aside.
Step3
In a small bowl, mix together the margarine, brown sugar and chopped nuts to form the topping or filling. It should be a bit crumbly, but sticky. Set aside.
Step4
Add dry ingredients together in large mixing bowl and sift.
Step5
In a separate bowl, thoroughly beat the egg until smooth.
Step6
Add the butter to dry ingredients by cutting it into tiny pieces. Spread evenly through the mix.
Step7
Add the well beaten egg that you set aside earlier along with the milk and vanilla.
Step8
Pour 3/4 of the batter into the greased baking pan and then top that with the filling. Spread the topping as evenly as possible.

Tips & Warnings

  • Spread filling or topping mixture onto batter with your heads for better control.
