Tarragon is a bittersweet, licorice-flavored herb that is used in sauces and stocks. It is also known for its anti-flatulent properties so it can be added to bean dishes and chili. Tarragon gives Dijon mustard its distinctive flavor and blends well with vinegar. Here's a simple salad dressing that adds an elegant touch to a Romaine or red leaf salad.

Instructions

Things You'll Need:

  • 1/2 cup olive oil or salad oil
  • 1/3 cup rice vinegar
  • 3 tbsp. sugar
  • 1 tsp dried tarragon or 2 tbsp. finely chopped fresh
  • 1 teaspoon salt
  • 1/2 tsp fresh ground pepper
  • 1 jar with lid (such as clean mayonnaise jar)

    How to Make Tarragon Salad Dressing

  1. Step 1

    Wash and finely chop the herb, if using fresh tarragon, to make 2 tablespoons.

  2. Step 2

    Measure oil and vinegar and put into a jar that has a lid.

  3. Step 3

    Add sugar, herbs and spices.

  4. Step 4

    Close tightly and shake well.

  5. Step 5

    Use immediately as salad dressing, or store in refrigerator and shake well before pouring over salad.

Tips & Warnings
  • This is also a good marinade to use for fish, since tarragon takes the "fishy" flavor away. Just pour over 3-4 fresh fish filets such as cod, tilapia or sole in a baking dish, dot with butter, and bake uncovered at 375 degrees for 25 minutes, or until fish flakes easily with fork
  • Discard any unused dressing after 4-5 days.
