Instructions

    • 1

Sift the cornstarch, sugar and salt together in a large bowl. Pour into a sauce pan, and place on a burner.

    • 2

Turn your burner on low heat.

    • 3

Pour in the almond milk. You want to be sure to keep stirring it all times so that the bottom and sides are continually being scraped.

    • 4

Alternate between using the spatula and a whisk. The whisk is there to help prevent lumps from forming. Although some like their pudding lumpy, most do not. You never want to serve lumpy pudding when entertaining.

    • 5

Leave this on the burner for 5 minutes. As the mixture begins to thicken, pour in the chocolate and vanilla extract. Be sure to speed up your speed of mixing at this point.

    • 6

Continue stirring for 2 more minutes or until the pudding has a perfectly smooth texture.

    • 7

Remove from the heat, and give it a last stir. You can now pour it into a big bowl to divide later, or place the pudding in individual serving cups. The latter is definitely the choice if you are entertaining others.

Tips & Warnings

  • Prepare individual serving cups with covers ahead of time. Pouring them and immediately putting them in the fridge can create a great consistency.

  • Keep stirring the pudding when possible to avoid burns and getting pudding stuck to the pan.
